Lime Protein Cheesecake Popsicles

These protein popsicles are here to save the summer! I looooove protein cheesecake, but baking in a hot oven in the dead of summer is not fun. But as for protein pops, hells yeah. Super easy to make, zesty and refreshing, and just oh so good. Lime protein cheesecake popsicles to the rescue!

Protein Popsicles! Lime protein cheesecake popsicles to be exact. These zesty little protein pops will cool you down on a hot summer day fo sho.
INGREDIENTS
Protein Cheesecake Popsicles
  • 125 g light cream cheese
  • ⅓ cup 2% greek yogurt
  • 28 g (1 scoop) unflavoured whey protein isolate powder
  • juice and zest of 1 lime
  • 3 Tbsp powdered erythritol
  • 2 packets (2 g) stevia powder
Protein Cheesecake Popsicles Crust
  • 2 Tbsp graham cracker crumbs
  • 2 Tbsp pecan pieces
  • ½ Tbsp salted butter
  • Protein popsicles
INSTRUCTIONS
  1. Throw everything for the cheesecake protein pops in a bowl and mix until smooth with a hand blender.
  2. Melt the butter and pour it in with the pecans and graham cracker crumbs in a magic bullet. Whiz it up until it's the texture of wet sand.
  3. Pour the cheesecake Mix evenly into popsicle moulds leaving room at the top for crust mixture. This recipe fits perfectly into four 90ml popsicle moulds.
  4. Carefully scoop in and pack the crust on top of the cheesecake mix.
  5. Insert popsicle sticks about two thirds of the way in. I used cake pop sticks, but whatever works.
  6. Put them in the freezer for at least four hours.
  7. Run some hot water over the mould to release your protein popsicles.
  8. Enjoy!
