Lemon Poppyseed Protein Muffins

This high protein muffin recipe is a reinvented version of the classic. They pack a high protein kick, and they’re lush, lemony, and lip smacking good! Top these lemon poppyseed protein muffins with some Banana Cream Cheese Protein Frosting to make them protein cupcakes. Don’t mind if I do :)


(makes 8 high protein muffins)Lemon Poppyseed Protein Cupcake
1/4 cup egg whites
1/2 cup 2% plain greek yogurt
1 cup almond milk
1 lemon – juice and zest
2 Tbsp coconut oil
1/4 cup coconut flour
1/4 cup oat flour
3 packets of stevia powder
3 scoops (90g) vanilla whey protein
1 1/2 tsp baking powder
1/4 tsp salt
1 pinch of vanilla powder (or 1/2 tsp vanilla extract)
2 Tbsp poppy seeds


Preheat oven to 325 fahrenheit. Line muffin tin with paper liners. Give the liners a quick mist of of olive oil spray, if you have it, to help prevent any potential sticking. Finely zest 1 lemon, then extract the lemon juice with a citrus juicer. In a large mixing bowl, combine wet ingredients. In a separate bowl, combine dry ingredients. Bit by bit, mix the dry into the wet. Pour protein muffin batter into liners, filling about 3/4 full. Put in the oven for 25 – 35 mins. They’ll be done when tops are golden brown, and toothpick inserted comes out clean.
