Protein Banana Bread

I am always overoptimistically buying too many bananas, only for them to get all spotty and over-ripe. Luckily these guys are perfect for protein banana bread! This high protein banana bread recipe is soft and moist, and absolutely divine with a thin spread of mascarpone, cream cheese, or nut butter. By the way, this recipe also makes great banana protein muffins as well (makes 12), just reduce the baking time to 20-25 minutes.


(makes 1 medium sized protein banana bread loaf)
3 bananas
3 egg whites
1 yolk
1/2 cup 2% plain greek yogurt
2 tbsp coconut oil
1/2 cup coconut flour
1/2 cup oats
3 scoops (60g) vanilla whey protein powder (I used Whey Gourmet)
2 scoops (66g) banana whey powder (I used Muscle Pharm Combat Powder – you can also just sub vanilla if you don’t have it)
3 tsp baking powder


Preheat oven to 325 fahrenheit. Mix all the wet ingredients in one bowl, all the dry in another, then combine them. Lightly grease a medium sized loaf pan and pour in the batter. Bake for 45 minutes or so. Check by inserting a knife in the middle – if it comes out clean, it’s done. Eat your high protein banana bread plain, or spread on some mascarpone, cream cheese, or nut butter. Enjoy!
