Another great little whey protein cookies recipe in my holiday baking series! Nothing feels more christmasy than gingerbread cookies, except maybe presents. In fact, why not combine the two and wrap up some of these bad boys for one of your friends?! Give the gift of healthy leanness this holiday season :)
Be sure to space these whey protein cookies adequately on the cookie sheet, because they expand quite a bit as they bake (lol I didn’t realize this until AFTER I made them haha). This recipe also makes a great addition to crusts and crumbles, like in my Gingerbread and Cranberry Protein Cheesecake.
These gingerbread men are crisp rather than chewy, so if you prefer chewy you could add a bit more butter and molasses, and reduce the baking time by a minute or two.
(makes about 25 whey protein cookies)
1 cup white flour
1 cup unflavored whey protein powder
1/2 tsp baking soda
1/2 cup butter (room temp.)
1/3 cup blackstrap molasses (or fancy molasses, but blackstrap is higher in iron and minerals)
3/4 cup erythritol
4 packets stevia powder
1 whole egg + 1 egg white
1 1/2 tsp ground ginger
1 tsp cinnamon
1/2 tsp allspice
1/4 tsp ground cloves
2 crushed candy-canes
4 tsp coloured sprinkles
1 – Mix flour, whey powder, baking soda, and spices in a large mixing bowl.
2 – In another bowl, mix butter until creamy, then beat in erythritol and stevia, then egg, egg white and molasses.
3 – Combine the flour mix into the butter mix, bit by bit until a crumbly dough forms. (Mix well to avoid dough separating later)
4 – Press into 2 balls, roll the first until its about 1/4 inch thick.
5 – Use cookie cutter(s) to cut out shapes, and place them on cookie sheet. Keep re-rolling and cutting out dough until Its used up.
6 – Decorate cookies with sprinkles and crushed candy-cane.
7 – Bake at 350•F for 6-7 minutes. Repeat with second dough ball.
